So how much time do we women spend in our kitchens? It is a gathering place to chat with good friends over a cup of java, share precious moments with our loved ones over a well-prepared meal. We cook, we eat and we hope to teach our daughters and sons to clean dishes. With a little effort, we can also pass down some family recipes. Some treat food as fuel for our bodies. Others have turned cooking into a splendid work of art. The garden of Eden probably included a touch of both. Before man and woman ever strolled through its splendor, God carefully prepared their food. " The land produced vegetation: plants bearing seed according to their kinds and trees bearing fruit with seed in it according to their kinds. And God saw that it was good." Gen 1:12 (NIV) We hope the recipes in this cook book will bring friends and relatives together around the dinner table. Within these pages, you'll find some family secrets passed on for generations. roasted cranberry chicken & pumpkin sandwich cake and

[-] A good friend of mine gave me a subscription to Better Homes & Gardens for my birthday and I am loving the yummy recipes I find inside each month. I had to share two of my latest favorites, their Roasted Cranberry Chicken and Pumpkin Sandwich Cake. Both are perfect for the Thanksgiving holiday. Let me know what you think!Roasted Cranberry Chicken 8 small chicken thighs (2 to 2-1/4 lb.), skinned 3/4 c low-calorie cranberry juice 3/4 c fresh cranberries 2 sprigs fresh thyme 4 tsp packed brown sugar Fresh thyme leaves
Preheat oven to 375 degrees. Coat extra-large ovenproof skillet with nonstick cooking spray. Heat over medium-high heat. Sprinkle 1/4 tsp. each salt and pepper on chicken. In hot skillet cook chicken meaty sides down for 5 minutes, turning once until well-browned on both sides. Transfer skillet to oven. Roast uncovered for 20 minutes, until chicken is no longer pink (180 degrees).
Meanwhile, in saucepan combine juice, berries, thyme sprigs, brown sugar and 1/4 tsp salt. Bring to boiling. Simmer uncovered for 15 to 20 minutes until slightly thickened. Discard thyme sprigs. Serve chicken with sauce and sprinkle with thyme leaves. Makes 4 servings.
Pumpkin Sandwich Cake 3/4 c all-purpose flour 1 1/2 tsp pumpkin pie spice 1 tsp baking powder 1/4 tsp salt 3 eggs 1 c granulated sugar 3/4 c canned pumpkin 1/2 c whipping cream 1/2 of an 8-oz. pkg. cream cheese, softened 1/2 c powdered sugar 1 Recipe Chocolate Cream Icing, below Pumpkin pie spice
Chocolate Cream Icing 1/2 c whipping cream 1 c bittersweet or semisweet chocolate pieces
Preheat oven to 375 degrees. Grease bottoms and sides of two 8x1-1/2-inch round cake pans. Line bottoms with waxed paper; lightly flour pans. In bowl combine flour, pumpkin pie spice, baking powder, and salt; set aside.
In a second bowl beat eggs and sugar with an electric mixer on medium to high speed until thick, about 5 minutes. Beat in pumpkin. Add flour mixture; beat just until combined. Spread cake batter in prepared pans. Bake 16 to 18 minutes or until wooden pick inserted near centers come out clean. Cool in pans on wire rack 10 minutes; remove and cool thoroughly.
For filling, in a chilled mixing bowl beat whipping cream to soft peaks; set aside. In a second mixing bowl beat cream cheese until smooth; beat in powdered sugar. Fold in whipped cream. To assemble, place one cake layer on serving platter. Spread cream cheese mixture evenly over bottom cake layer. Top with second cake layer. Refrigerate while preparing Chocolate Cream Icing.
To make icing bring whipping cream just to boiling over medium-high heat. Remove from heat and pour over chocolate pieces in medium bowl (do not stir). Let stand 5 minutes. Stir until smooth. Cool 15 minutes.
If Chocolate Cream icing is too thin, cover and chill 30 minutes until of spreading consistency. Too thick, add a teaspoon of milk or cream. Spread over top and sides of cake. Sprinkle lightly with pumpkin pie spice. Chill cake at least 1 hour before serving. Store cake, loosely covered, in refrigerator. Makes 8 servings. [-] Ok, so as it turns out, it was a secret that these images (like the one I used yesterday) were going to be available online. Doh! In my defense, no one ever actually mentioned that tiny detail to me. So, I unknowingly blew the lid off the little secret yesterday when I mentioned it on my blog. Surprise! ;) Well, now that everyone (or at least the 100 or so who read this blog) knows, I might as well keep going, right? Right! Here is the second image that Holly sent me. I think this girl intended to be on a beach sunning herself somewhere, but let's face it -- she came to Wisconsin. LOL! So, here she sits in a little pile of snow:  I colored the bikini with my copics, and then added liquid applique to the top of both pieces. Once it puffed up (after heating), I added a little glue and glitter. I actually drew the santa hat myself, and added the liquid applique on that as well. The sentiments are printed on the computer, but unfortunately I don't recall the name of that font. Sorry! The holly brad (isn't that CUTE?!) is by Making Memories, from their Fa La La line. I bought a pack of them (12 berry brads with 24 leaves) at Michael's. The three berries you see there are actually all one big brad. And here's the inside of the card:  Hey, like I said, she's in Wisconsin now. She's going to need something a little warmer to wear if she's going to make it through the winter up here. ;o) In case you missed the edit at the bottom of yesterday's post, these images are going to be available on www.squigglefly.com. Go ahead and bookmark the site, and I'll be sure to post here when it goes live so everyone remembers! It's the least I could do, having blown the cover and all. *wink* Enjoy the day, and STAY WARM! Night Job

[-] I was just sitting here answering my email from today when blog opportunities started to come up. I was so surprised I almost missed it and when i was finished with it another one appeared and I got that one too. It's been so slow that when I see a white opp I kind of go into shock and it takes a minute before I react. I'll have to sleep in a little tomorrow but that;s all right since I'm retired and in no hurry. Sitting here just doing email really gets to be a drag. December Is Here Soon

[-]  In just a wink of eyes, December is approaching soon. It is just like we celebrated Christmas last year and now it is another year to come. The three of us were at Jusco last night for dinner and Le-Ann and Ee-Thern saw the Christmas tree at the concourse area. Both insisted I took a picture for both of them. When I was driving back from Jusco last night, both of them start asking me "Mommy, where is our house Christmas tree" . Both still remembered they decorated the Christmas tree last year ( click here ). Time really flies and very soon we will be preparing for CNY. I think the most happiest person is still the kids.
